Pumpkin Spice Preserves Recipe



Fall has finally graced us with it's presence, we've made it through the summer heat, this crazy hurricane season and now it's time for the holidays.

The weather has finally cooled off, halloween is literally in a few days but I just want to cuddle up under a blanket drinking something warm and watching my fall shows on TV...Anybody else watching Stranger Things?

I recently got a book in the mail called Can It & Ferment It;this book inspired me to make the recipe below; I honestly wasn't sure how well it would turn. I also normally don't eat pumpkin like most people do, so this was a fun little cooking project for me.

Honey Salmon with Avocado Dressing Recipe






Give a big welcome to this gal here because I just became the newest kid on the Youtube block. I contemplated for a while on whether I wanted to be on camera or remain behind the words on paper or on my blog. To be honest with you, being on camera in any kind of way was never a thing for me, I was always very awkward. I'd write myself the best script in the world, but freeze up as soon as I got on camera...Well, maybe I'm exaggerating but you get the point.

Earlier this month, I launched my first Youtube video in which I talked about a new skincare routine that I've been using for a month now(blog post coming soon). Anyway, I followed that first video up with a food demo, which you're familiar with if you follow me on Instagram. Anyway, I made a quick and easy Salmon recipe that'll turn your meal prep or date night up a few notches. I don't know about you, but with a busy work and life schedule I don't have time to spend hours on hours cooking everyday. That is why I love making quick and simple meals!

Hibiscus Caipirinha Recipe


My birthday just past, but we're still in the month of July so I'm inviting y'all to celebrate by making this lovely Caipirinha and with me. Ever since one of my college classmates introduced me to this Brazilian drink, I've been hooked. If you've never heard of it, a Caipirinha is a Brazilian drink which is made with Cachaca(a Brazilian distilled spirit made from fermented sugarcane juice), sugar and Lime. Pretty simple recipe, so I decided to kick it up a notch by adding Bissap. If you read my previous post, you should be quite familiar with this name by now(if not, check it out here.)

Jus De Bissap aka Hibiscus Juice Recipe


You might remember my post on Nu Waters Co-Op not too long ago. Well, one of the items that I purchased while there was a bag of dried Hibiscus petals. I'd had them a while, just waiting for some free time to make some juice from them.

When I was in my single digits(age wise), my family and I lived in Cotonou, Benin in West Africa. During our 3 years there, we were introduced to not only a new culture different from our Rwandese one, but we were also introduced to new foods as well. My mom shopped " au marcher" BKA a food market, at these markets you would find all kinds of crops, herbs, meats and other items being sold by different " vendeuse" bka vendors. In addition to these markets, there were also "mobile" vendors who would travel neighborhood-to-neighborhood selling prepared foods, Garri with nuts, the most refreshing water I've ever tasted and Bissap.

Tomato, Egg and Feta Banana Bread Toast


Last month I received a wonderful package from H-E-B and Texas Pure Milling. The box contained 3 different flours, all for me to try in the kitchen. I spent a little while attempting some recipes, but what I really wanted to try was the bread flour. I had always heard great things about bread flour and what great consistency you can get from using the flour instead of all-purpose flour.

I've been in a bit of a funk lately, well not a funk but I haven't had the motivation to write. On top of work and all the extra things that I do, I've just been neglecting my little baby(I apologize). I'm dedicating this weekend to updating you all on all the fun things I've been working on in the kitchen and this is one of them. I'm listening to Brandy's "Full Moon" & "Human" albums as I type...I've been listening to her lately, especially on my drives, I just love singing along to a great song in the car, it makes the drive shorter.

Mini Chocolate Cream Cheese Pastry Braids



I took some time off from blogging after the Super Bowl, but I'll be coming back with lots of posts. Which reminds me, I need to update y'all on my crazy-busy-fun SB51 experience...We can save that for another post. This Month, the item that caught my eye was the Pure Dark Chocolate bar. This bar combines the rich strong taste of dark chocolate cocoa, with the lively fun taste of Anglesey sea salts. This combination brings about a nice balance for your palate. If you're like me, and tend to find dark chocolate a bit strong, the sea salt will balance it out for you.

Superbowl Burrito Pastry



I bought some frozen puff pastry sheets on a recent trip to the store. This kind of dough is really time consuming to make it( trust me I've tried), so I thought I'd try these and see how they turn out. The funny thing is, that I wasn't sure what I wanted to make at first so I spent all night thinking. I somehow came up with the idea of making a buritto. The very next day, I made this burrito pastry.

With Superbowl literally at the end of this week, it's time to think of what you'll eat or serve to your guests. This recipe can easily be adapted to smaller portions. And it isnt that time consuming.  By now you should be quite familiar with my partnership with DegustaBox. Well, I used One & Done seasoning( a special gift from Degustabox to some of their survey correspondents). I used it while seasoning the chicken that I used in this recipe. A special note about this recipe, it will taste even better the next day(just warm it in the oven).

Ingredients
1 Puff Pastry
Rice, cooked
1 Chicken breast, cut into small portions
Garlic, minced
Onions, sliced
Pico de Gayo
Can of beans
Tomato, diced
Avocado slices

Directions
1. Season the chicken with garlic and One & Done seasoning.
2. Add oil to a cooking pot, once ready add the chicken and cook until tender and done. Remove
3. Add onions to pot and cook until slightly tender, then add tomatoes, beans and cook for 5-10 min.
4. Add cooked rice and mix well for 10 min.
5. Preheat oven to 400 degrees. Unfold your defrosted pastry sheet on an oven pan or baking sheet


6. With the long side facing you, slowly and carefully add the rice mixture, chicken, pico de gayo, avocado and feta cheese onto the puff pastry. Making sure to leave enough space on each side for closure
7. Roll up the short side to meet in the middle, and tuck the ends


8. Bush pastry with egg wash and cut a few slits at the top of the pastry
9. Place in oven and cook for 20 min or until the pastry is nice and golden brown


10. Let cool a couple of minutes before cutting and serving

Halloween Tuna Salad Mummy with Wasa Flatbread


Halloween is literally right around the corner. Some had it all planned out since the beginning of the month, from the decor, costumes, to festivities, food and drinks. If that person is you, kudos to you! But for those of you who are just now trying to figure out a last minute contribution to that Halloween party, I've got the easiest( well kinda) appetizer you'll find.

I recently received my monthly Degustabox, if you haven't heard it is a monthly surprise food product delivery box that recently launch in the U.S this summer. The boxes come with some interesting products which you'd never think to try on your visit to your favorite grocery store, so it basically introduces me to great products I normally pay no mind to while shopping. Well anyway, one of the items in the box were these Wasa Sesame & Sea Salt Thins, which are basically like crackers but a little tougher. They're oven baked, and once crunched into instantly give you a sesame seed taste with a bit of sea salt. The brand offers 7 grams of whole-grains and 80 calories per serving making them an easy, healthy snack option. We'll I thought the sesame seed taste was a little much for my liking, so having the tuna actually brought a balance to these crackers.
But, since we're not talking about loosing weight here for Halloween; on top of my tuna mummy, I sprinkled shredded Parmesan cheese to give this mummy "bandage" look. Then I completed the look by adding 2 drops of hot sauce in for the eyes. Once you're done, you can serve with the Wasa Thins! Happy Halloween.

Sam Mills Chicken & Green Bean Pesto Pasta


It's always exciting receiving an e-mail notification that my Degustabox has been delivered. I always pick it up and tear the box apart ready and excited to see what's in there. I had been tracking this box for what felt like forever, mainly because of the holiday that pushed the time of delivery. So this month featured a lot of European brands like Michel et Augustin cookies(such delicious cookies), Sam Mills Pasta(gluten free) and The English Provender.

The box is usually nicely packaged, with anything breakable wrapped in bubble wrap to prevent it from breaking on the way to you. So far what I have noticed is that they introduce you to a lot of natural, Non-GMO product verified, as well as gluten free products.



After seeing the Sam Mills gluten free corn and quinoa pasta, I immediately thought of something I wanted to make. I purchased some fresh basil and Parmesan cheese from the store and came home to make chicken pesto pasta. I'm always encouraging y'all to get your box, so we can cook together. Ingredients:
Sam Mills Corn & Quinoa Pasta (note: I mixed in regular pasta)
Chicken Breast, cut in small portions & season with lemon salt/pepper 
Nando USA Peri Peri Sauce (optional)
1 tomato, chopped and drained
Green beans

Pesto:
1/2 cups fresh basil
1 garlic glove
Peanuts (most other recipes use pine or walnuts)
1/3 cup Olive oil
Parmesan cheese
Salt & Pepper


Directions:
1. Add all pesto ingredients into a food processor, saving oil and salt & pepper for later. Once it is nicely chopped, add salt, pepper and oil. 
2. Set pesto in the fridge
3. Add seasoned chicken into lightly greased dutch oven and cook until chicken is tender
4. Add green beans and tomatoes, and let cook
4. If you'd like, add half & half or mix together flour with milk until smooth 
5. Pour in and mix with chicken
6. Cook pasta, drain and add to dutch oven
7. Add pesto, Parmesan cheese, and mix well
8. Serve!

White Lily & Sir Kensington Spicy Shrimp Tacos with Chipotle Mayo


I got my Degustabox for the month you guys!!! I was so excited when I got a notification that my package had arrived that I ran to the leasing office ready to see what this month had in store. This month came with different products as always, ranging from snacks to flours and condiments. I'll be honest with you, I'm always excited to see what they decided to add to each box everytime. It always feels like Christmas or like its my birthday when I get my box in the mail. It's always full of products that you never think of buying yourself, because you've likely never tried them before(Ignore the Honey Bunches of Oats & Maria cookies).

When I opened the box(with my leasing office friends. lol), 2 items stood out immediately.The first one was the Non-GMO verified White Lily White Grape and Wheat Flour and Sir Kensington's Chipotle Mayonaise. Right then, I knew exactly what I wanted to try making this month. Another item that I'm loving is Loacker Rose of the Dolomite's crunchy hazelnut chocolates - they remind me of one of my favorite Belgian chocolates. I also loved ALO Allure's refreshing Aloe and mango drink.

Valentine's Day Texas Grapefruit Cocktail


If you read my previous post, you might have noticed a cocktail drink served with the meal. I made an impromptu cocktail drink after preparing that recipe, the best things come when you least expect them. Isn't that crazy, when you're not looking is when something magical comes into your life. When you're not prepared(with a notepad and pen in my case), the most magical recipe could pass you by.

This is probably the easiest cocktail recipe I've made thus far, there were no complications. Using Wonderful Sweet Scarletts Texas Red Grapefruit and Grand Marnier, I was able to create an easy lovely cocktail to share with your loved one(s) this Valentine's Day. One Grapefruit will serve 2 flute glasses, so increase your measurements accordingly. I'll just tell you right now, you're gonna find yourself wanting more so you might as well make more.

Texas Grapefruit Cocktail

Ingredients:
1  freshly squeezed Texas Red Grapefruit
4 oz. Grand Marnier
Honey( optional, if you want more sweetness)

Directions:
1. In a mixer, pour ice, Grapefruit juice and Grand Marnier 
2. Shake and pour in glass
3. Garnish as desired
4. Et Voila!

Haylie Duff's Sweet Scarletts Grapefruit BBQ Chicken Skewers Recipe


As I reflect on the things that I have been able to do through my full-time job as well as Brunch & Conversation this year, I've learned that it's important to be wonderfully kind to others. I've learned that what you project out into the world is returned back to you in some other similar form. I'll be the first to tell you, sometimes it's not an easy task. Not everyone is going to love you and you won't love everyone, but that doesn't mean you can't be a kind person. I want to encourage you to be more "Wonderful" this Valentine's Day( like these grapefruits that I've been eating for the past month.)

Speaking of grapefruits, I recently received these refreshingly juicy grapefruit in the mail to review. They're from a new Texas brand called Wonderful Sweet Scarletts; which comes from the same company that gave us Wonderful Pistachios & Almonds, POM Wonderful and Wonderful Halos. Sweet Scarletts are grown, harvested and packaged in the Rio Grande Valley in South Texas. They are fresh and juicy and would go perfectly with a nice salad or as an addition to some delicious meals. The brand recently partnered with actress Haylie Duff and she was able to create this Grapefruit BBQ Chicken Skewers recipe I'm sharing with you. I tried her recipe out (sans wooden skewers) and paired it with a chopped scallion and turmeric fried rice that also had the BBQ sauce mixture. Want to try this recipe? Chicken Skewers:
  • Wooden or Metal Skewers
  • 3 boneless, skinless chicken breasts
  • Handful of cilantro
  • Pinch of sea salt & black pepper
  • Wonderful Sweet Scarletts 
Grapefruit BBQ Sauce:
  • 1 Wonderful Sweet Scarletts Grapefruit, juiced
  •  Pinch of grapefruit zest
  • 1⁄4 cup ketchup
  • 1 heaping tablespoon Dijon mustard 
  • 1 heaping tablespoon brown sugar
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 tablespoon olive oil
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons scallions or chives, chopped
1. Dice chicken into 1 inch pieces.
2. Slide on to skewers and season with sea salt and black pepper.
3. Grill until chicken is done, or no longer pink in the center. 
4. Baste Wonderful Sweet Scarletts Grapefruit BBQ sauce across each skewer 
and garnish with cilantro. 
5. Garnish with additional Wonderful Sweet Scarletts Grapefruit wedges (optional).

New Years Eve Grand Sangria Recipe




To you:

2015 has been quite the journey. It has been filled with new discoveries, challenges and successes, as well as a few bumps on the road. As we get ready to celebrate the end of 2015 & beginning of 2016, I wanted to take this time to thank you all for your support. I started B&C almost 2 years ago(it'll be 2 years this February),  not knowing what, if anything would come of it. And look what all has happened. Thank you all for the support, it means a great deal!

In 2016, I plan to share with you some more amazing experiences, even better and grander than those from 2015.

In the meantime, here's a little inspiration to help you in the new year.

May you take time to review the mistakes made in 2015, so that you can have a fresh new year. Take time to recuperate, so that you can come up with a better and smarter strategy to make the new year a success. Learn from those mistakes so that you don't continue repeating them every single year, this advice is for both business and personal lives.

Set clear realistic goals, I'd suggest one or two tough ones, that are important. Then make it your mission to do everything you can to get you to reach that goal. If it meals working harder, applying yourself more, networking, changing your social circle, moving elsewhere, going back to school, etc. Put together a plan and work everyday day knowing the end prize. Be more strategic, make an investment into yourself or your business. Let's have a grand 2016!


This Grand Sangria recipe is a adaptation of Grand Marnier USA's recipe, with a little of my personal adjustments/additions. Enjoy!



Grand Sangria

2 1/2 cups Grand Marnier
2 bottles of red wine
seedless red or black grapes
1 lemon, sliced
1 orange, sliced
2 apples, red & green, cored and cut into .5 inch wedges
3 cinnamon sticks
Sugar
2 cups Maracuja Syrup ( passion fruit syrup)
2 cups Orange Juice

  • Combine all ingredients except the wine, juice and syrup in a beverage dispenser or punch bowl
  • Let stand 1 hour(or overnight if you prefer)
  • Pour in wine & juice, and stir
  • Pour in the Passion Fruit syrup, mix well and taste
  • Serve in ice-filled glasses

All Natural Coconut Water Margarita Recipe, Neli and Beidi Giveaway

Cucumber Breeze Cocktail Recipe


Several weeks ago, you remember I went to Etoile Cafe Et Bar and really enjoyed their Cucumber fizz summer drink. It was so refreshing, like the summer breeze.

Anyway, I was home playing with a little kitchen tools, cutting swirly cucumber slices then it hit me. BOOM! You should create a cucumber juice. I off course said that outloud and my mother advised I made a drink. And again, BOOM!

After playing around in the lab, excuse my lack of exact measurements. I came up with this sweet lil' thang I'd like to call Cucumber Breeze, because well obviously! Check it out, hope you like



Ingredients:
1 Cucumber
Honey
Tequila( Jose Cuervo Especial)
Lime

Directions:
1.  Chop cucumber and add to blender. Blend until smooth, then use a kitchen drainer to drain the juice. 
2.  In a cocktail mixer or a tall cup, combine all ingredients as desire( I didn't quite measure, but start light and add more as needed to balance) 
3. Pour over ice in your desired glass. Use a leftover slice of cucumber to garnish 
4. Enjoy!

Here's the story. Young girl gets home from work, turns music on and starts jamming out. She realizes, she kind of wants to make food, so she proceeds to check the fridge for food. In the midst of her search, while still dancing to her favorite tunes, she comes up with an idea. An idea so broad, she isn't even sure what it is. She looks around the fridge and pantry for ingredients that would satisfy her creation. As she becomes stuck with a missing ingredient, she improvises. And BAM! a new recipe arrives. Enough of my storytelling, let's get to the recipe.

Ingredients:
Tilapia
1/2 Onion
1 or 2 Mangos
Vinaigrette(home made or from the store)

Directions:
1. Bake the Tilapia as desired. I usually put a little lemon, pepper and salt and top it with white onion
2. Chop up the beets and Mangos into small square pieces
3. Set aside
4. Make a vinaigrette with onion or use one from the store
5. Mix Vinaigrette with Mango and Beets
6. Store in the fridge
7. Once everything is ready, you can serve

Côte d'Or Chocolate Crepes | #MenuofMenus Giveaway



One of my most favorite breakfast treats that I grew up on (that will FOREVER be in my life) are Crepes. Which some like to call french pancakes or maybe sweet tortillas? Anyway, I got up one morning and decided to add some Belgian Chocolate to the recipe. I would like to apologize for not having measurements, I tend to not measure most of the time. But here is the recipe below. let me know how it turned out!

Ingredients:
Flour
2 Eggs
Sugar
Milk
Cote d'Or Chocolate
Olive oil

Directions:
1. Pour Flour and sugar in a large mixing bowl
2. Mix
3. Crack 2 eggs at the center of the mixture
4. Begin stiring carefully in a circle motion(to mix the mixture with the egg smoothly)
5. Add a little milk and continue to mix
6. Continue to add milk until you have a light smooth paste mixture
7. Cut chocolate into small pieces and add to mixture
8. Spray or add a little Olive oil to a pan
9. With a measuring cup, pour mixture on pan in a circular motion
10. Continue making a circular motion with the mixture until it fully rounds the pan
11. Once Crepe is golden brown on the bottom side, flip
12. Repeat step 12, done! Enjoy ;)

As I write this post, I have Tony Bennett & Lady Gaga's "Cheek to Cheek" album playing in the background. Oh, what a stylishly romantic sound. I was inspired to create a simple Valentine's Day dish using, one of our client's products that I got from work, " Minute Rice" and some frozen Shrimp that was chilling in the fridge. Fried rice is tricky to make, you have to have the right kind of rice, and cook it just perfectly. This easy make rice was perfect and so quick to make.

Anyway, back to talking about how romantically Jazzy this album is. So soothing, relaxing, calming, beautiful; makes you feel romantic just listening to it. This Valentine's Day I encourage you to be present, in your lover or loved ones' lives. Whether you are single or taken, you always have a Valentine. So this Valentine's Day, I encourage you to put down that phone, close that computer screen, turn off that TV and just enjoy every moment you share with your Valentine/Valentines. These days, we have so many things keeping us from experiencing life, and soaking in all the beauty that is around us.

Curried Shrimp Fried Rice

Ingredients:
Frozen Shrimp
Minute Rice
Curry
Olive oil
Salt
3 Scallions finely diced
1 Red Bell Pepper diced
Half an onion diced
Garlic diced

Directions:
1. Add Olive Oil to a pan, add in Scallions, Curry and Salt
2. Stir for 3-4 minutes
3. Add Shrimp, garlic and mix. Add  a little bit of Red Bell Pepper 
4. Cook until liquid evaporates
5. Set Curried Shrimp aside ( or just eat it as is)

Fried Rice:
1. Follow the directions on the Minute Rice package to prepare the rice
2. Once ready, set aside to cool
3. In the same pan you cooked the Curried Shrimp, add Olive Oil
4. Add the Half Onion, bottom half of the Scallions
5. Cook until onions are a light brown
6. Add the rest of the Red Bell Pepper
7. Add Rice and mix well, add  a little bit of olive oil. Stir
8. Add Curried Shrimp
9. Continue stirring and mixing for 4-5 minutes. Serve!

Quick & Simple Strawberry Popsicle Recipe


The whole week has been gloomy here in Houston, so it's nice to finally have some light. I've got a little refreshing treat to go with this beautiful Sunny, Sunday afternoon. STRAWBERRY POPSICLES!!!

Have you got some fresh strawberries laying around in the kitchen? Yeah, yeah? Well let's make some popsicles!

Ingredients:
Strawberries
1/2 cup of milk
Honey

Instructions:
1. Cut strawberries in half
2. Add to blender
3. Add milk and honey 
4. Blend well
5. Pour into Popsicle mold/cups
6. Enjoy!
